Porridge

Porridge is a great breakfast for anyone, and is especially soothing if you are unwell. Try it topped with a compote of mixed fruit for a delicious nutritious start to the day.

Serves 4         gluten free option / soak overnight

Ingredients

1 cup rolled oats
1/2 cup rolled barley
1/2 cup rolled rye, quinoa or spelt

Steps

  1. Soak rolled grains in 2 cups of cold water overnight in the refrigerator.
  2. In the morning add 2 more cups of water and cook in a saucepan over gentle heat, stirring ocassionally, until it is the right consistency. This will take about 10-15 minutes.
  3. Stir porridge well and serve with your preferred milk.
  4. Add your preferred topping; try chia seeds, linseeds, drizzle of honey, soy yoghurt or fruit compote.

For gluten free option use rolled brown rice or rolled quinoa instead or oats/rye/barley. 1 part grains to 2 parts water.
