Vegetable Patties

 

Serves 8.      

  • 1 cup Rice
  • 1 ½ cups Carrots grated
  • 1 cup Parsnips grated
  • 1 ½ cups Pumpkin grated
  • 3 Celery minced
  • 1 ½ tsp Curry
  • 2 tbs Tamari
  • 1 ½ tsps Cumin
  • ½ cup Rice flour
  • 1 clove of Garlic - crushed
  • 2 Onions minced

1.      Place rice in casserole dish, add 2 cups of water and cook in the oven  for 1 hour at 180 degrees.

2.      Lightly steam all veggies while rice is cooking.

3.      Mix all ingredients together and season to taste.

4.      Add enough flour to hold mix together. (minimal amount)

5.      Form into patties and bake on a lightly greased (use olive oil) oven tray at 180 degrees for about 20 minutes or until golden brown.
