Over the cooler months our retreat participants have been enjoying this warm cabbage salad as a regular side dish. By steaming the cabbage the salad becomes more digestible and, of course, more appealing on a chilly Winter’s day.
Ingredients:
1/4 green cabbage
1 medium carrot
1 small green capsicum
Handful Beanshoots (optional)
1 tsp. fresh Chives, chopped
1/2 tsp. fresh Coriander, chopped
1/2 tsp. fresh Parsley, chopped
4 leaves Vietnamese Hot Mint
For the dressing
1/2 cup Apple Cider Vinegar
1 tbsp. Honey
1/2 tsp. fresh Ginger, chopped
Method:
1. To make dressing, simmer the vinegar, honey and ginger for 5-10 minutes on stove top and let cool
2. Slice green cabbage finely, and steam
3. Peel and shred (or grate) the carrot, and finely slice the capsicum
4. Strain the cabbage of excess water, then combine all salad ingredients while cabbage is still hot
5. Pour dressing over the vegetables, and serve ideally while still steaming
Alternatively, mixture can be refrigerated overnight and served as a chilled salad.
